Choosing Wagyu Beef

Beef Cuts & Cooking Methods

Beef Cuts

Since 1993, we have strictly sold our full-blood cattle as top-quality breeding stock. As of 2013 we have entered the beef production market. Our animals are pasture raised until they reach a selected weight and age. At that time they begin a grain-fed regimen. Our full-blood animals are fed on a 500+ day ration, which has been designed and used inside the country of Japan. This feeding is specifically designed for the Wagyu breed and is what takes our meat beyond prime.

“The marbling is unprecedented as well as the tenderness and flavor.”

- Urban Farmer Restaurant, Portland, OR

In addition to our full-blood herd, we also have F1’s (50% Angus, 50% Wagyu). These animals are kept on pasture longer than the full-blood Wagyus and are grain-fed for 250-300 days.

“Chef Matt can count on one hand how many times he’s gotten to butcher a specimen like this.”
